A useful sample test must be repeatable. If two teas are brewed with different leaf weight, water, temperature or time, the comparison can be misleading.
Set one brewing method
Record sample weight, water volume, water temperature, infusion time and vessel. Use the same method for every candidate and keep part of the approved sample sealed as a future reference.
Evaluate six checkpoints
- Dry leaf: shape, size distribution, colour, stalk, powder and foreign matter.
- Dry aroma: freshness and freedom from smoke, mould or foreign odour.
- Liquor: clarity, brightness and the colour expected for the selected green tea style.
- Taste: briskness, body, astringency, bitterness, aftertaste and balance.
- Infused leaf: opening, tenderness, colour and visible uniformity.
- Specification: moisture, ash, water extract, residue limits and other destination requirements.
